Ever since she saw “Angelina Ballerina,” my daughter has wanted to take dance lessons! Our local Parks and Recs offers a “Ballerina Princess” class, so I signed my daughter up! I’ve got some fantastic pictures of her first dance classes, but have you noticed the lack of dancing scrap kits in the community? Of course, I had to design my own. Sooooooo….. here’s “Happy Feet!”

Mmmm, chocolate!

Want something sinfully good? I took a break from my designing my new kit today and decided that I wanted something chocolately. Unfortunately, tomorrow is grocery day, so our cupboard is bare! I remember getting an e-mail about a dangerously delicious cake that I could make in 5 minutes, but darn if I could find that recipe! So, I googled it and found several recipes. This is the one I tried:

Ingredients

  • 4 Tbs. plain flour
  • 4 Tbs. sugar
  • 2 Tbs. baking cocoa (Hershey’s)
  • 1 egg
  • 3 Tbs. milk
  • 3 Tbs. oil
  • 3 Tbs. chocolate chips (optional)
  • Small splash vanilla

Directions

Add dry ingredients to regular size coffee mug and mix well with a fork. Add the egg and mix thoroughly. Pour in the milk and oil and continue to mix well. Add the chocolate chips (if using) and vanilla, and mix again.

Put mug in the microwave and cook for 3 minutes at 1000 watts. The cake might rise over the top of the mug, but don’t be alarmed! Allow to cool a little, and tip out onto a plate if desired. Pour chocolate syrup over warm cake.

I added marshmallows instead of chocolate chips and a sprinkle of powdered sugar. This is how it turned out:

The kids and I thoroughly enjoyed it!
